Lager Marinated Grilled Steak

Ingredients
- (4-6 lbs) Beef chuck steak
- (12 oz) Hop Creek Farms Highland Lager
- (1/2 cup) Olive Oil
- (1 small) Onion
- (1 clove) Garlic
- (2 tbsp) Lemon Juice
- (1/2 tsp) Salt (optional)
- (1/4 tsp) Black Pepper (freshly ground)
- (1 tsp) Dry Mustard (or 1 tsp prepared brown mustard)
Directions
Preparing the Marinade
Get Your Ingredients Ready Cut the onion into very thin slices. Crush or finely mince the garlic clove.
Combine Everything In a large bowl, mix together the beer, oil, onion slices, garlic, lemon juice, salt, pepper, and mustard. Stir until well blended.
Let It Soak Place the steaks in a large dish or resealable bag and cover them with the marinade. Refrigerate for 4-6 hours, flipping the steaks a few times so they marinate evenly.
Cooking the Steaks
Get the Grill Ready Heat your grill to medium-high. You're looking for a temperature that will give you a nice sear. Charcoal gives the best results, but gas works well too.
Cook the Meat Take the steaks out of the marinade, keeping some onion pieces aside. Put the steaks on the hot grill and cook for 7-10 minutes on each side until they're done the way you like them.
Create Flavourful Smoke As the steaks cook, add some of the marinated onion onto the grill. The smoke this creates adds incredible flavour to the meat.
Finish and Plate Take the steaks off the grill when done and let them sit for a couple of minutes before serving.
Notes
- Keep the marinating time between 4-6 hours. Going longer can make the meat taste bitter from the beer.
- These steaks are best enjoyed at medium-rare to medium doneness. Cooking them well-done will likely result in tougher meat, even with the marinade.
- Boneless chuck steaks will cook faster, so keep an eye on them and reduce the cooking time slightly.
- Try cooking the leftover onions in a skillet and spooning them over the finished steaks for extra flavour.
- A charcoal or gas grill gives the best results. Skip the electric tabletop grill for this one.
- Chuck steak is wallet-friendly and responds beautifully to marinating, proving that great grilled steak doesn't have to cost a fortune.
