Air-Fryer Ground Beef Stuffed Zucchini
Filled with a savoury mixture of seasoned ground beef, creamy Havarti, and tangy feta cheese, then cooked to perfection in your air fryer. Not only does this recipe make great use of those abundant summer zucchini, but it's also a fantastic low-carb meal that's both satisfying and nutritious. The air fryer gives the zucchini a lovely, tender texture while keeping the cheese filling perfectly melted and golden. Ingredients

  • (1 lbs) Beef Ground
  • (2 large) Zucchini
  • (1) Garlic Clove (minced)
  • (1 cup) Havarti Cheese (shredded)
  • (3/4 cup) Geta Cheese (crumbled)
  • (2 tbsp) Fresh Basil
  • (1/4 tsp) Salt
  • (1/8 tsp) Black Pepper

Directions

Prep your zucchini - cut each one in half the long way, then trim a small slice off the bottom so they'll sit nicely and flat without rolling around. Now comes the fun part: scoop out the inside flesh, but be careful to leave about a quarter-inch of the zucchini wall so you've got sturdy little boats to stuff.

Next, grab a good, heavy skillet (cast iron works great if you've got one) and cook up your ground beef with the minced garlic over medium heat. Keep stirring until the beef is no longer pink, then drain off any excess fat - nobody wants greasy stuffed zucchini!

Once your beef is ready, mix in the Havarti cheese along with half of your feta (save the rest for later), plus your fresh basil or oregano, salt, and pepper. Give it all a good stir until everything's nicely combined.

Now, fire up your air fryer to 350°F. While it's heating, stuff each zucchini half with your beef and cheese mixture - don't be shy about packing it in there! Pop them onto a greased tray in your air fryer basket and let them cook for 8 minutes.

After that first cooking time, sprinkle the remaining feta cheese on top and cook for another 5 minutes or so, until the zucchini feels tender when you poke it with a fork and that cheese on top is all melted and golden.

And that's it - you've got a delicious, hearty meal perfect for using up all that zucchini from the garden!
