  • (1 tsp) Onion Powder
  • (1 tsp) Garlic Powder
  • (1 tsp) Dried Oregano
  • (to taste) Kosher Salt
  • (1/4 cup) Extra-virgin Olive Oil

Directions

This recipe has two parts to it: making the sauce and then preparing the cabbage rolls. Each step is straightforward and quick, ensuring you spend minimal time in the kitchen while achieving maximum flavour. First, you'll combine the ingredients for the sauce in a pot, allowing the flavours to meld beautifully. Once the sauce is simmering, you can focus on assembling the cabbage rolls, which involves mixing the ground meats, riced cauliflower, green onions, and parsley before stuffing the mixture into the precooked cabbage leaves. Despite the layers of preparation, the entire process takes no time at all and is totally worth it for the incredible taste and satisfaction of a home-cooked meal.

For the sauce:

Start by preheating your oven to 375°F (190°C). This will ensure that it's nice and warm when it's time to pop in those tasty cabbage rolls.

Grab your blender and toss in the diced tomatoes, apple cider vinegar, red pepper flakes, onion powder, garlic powder, and oregano. Blend until you have a smooth mixture. Don’t forget to taste it—add salt and pepper to your liking!

In a large deep skillet or pot, pour in your extra-virgin olive oil and heat it up over medium heat.

Once the oil is hot, carefully add your pureed tomato sauce to the skillet. Bring it to a lovely simmer, then reduce the heat to medium-low. Let it simmer gently for about 20 minutes until it thickens up a bit. You’ll know it’s ready when it smells amazing and coats the back of a spoon!

Now you’re all set for the next steps in assembling your keto stuffed cabbage rolls!

For the cabbage rolls:

Get started on those delicious cabbage rolls!

First thing first: fill a large pot with water and bring it to a rolling boil. Once it’s bubbling away, toss in the cabbage leaves and blanch them for about a minute until they’re tender and flexible. After that, carefully set them aside to cool down a bit.

Next up, let’s make that tasty filling! In a big mixing bowl, combine about ½ cup of the tomato sauce with the ground meats, riced cauliflower, sliced scallions, and a sprinkle of parsley. Don’t forget to season it with some salt and pepper to add a nice kick.

Now, grab your large baking dish and spread a thin layer of sauce on the bottom—this will keep everything nice and moist. For each cabbage leaf, use a paring knife to cut out the tough triangular rib at the base. Then, place about ⅓ cup of your filling at one end of the leaf and roll it up, making sure to tuck in the sides as you go.

Arrange the rolls seam-side down in the baking dish over the sauce, and once they’re all in there, spoon the remaining sauce over the top. Now, it’s time to pop them in the oven! Bake these beauties for around 45 to 55 minutes until the meat is cooked through and reaches an internal temperature of 150°F.

Just before serving, give them a nice garnish of fresh parsley for that extra touch!

Enjoy!

Note:

For added convenience, feel free to opt for pre-packaged cauliflower rice if that suits your cooking style better. This time-saving alternative allows you to whip up your keto stuffed cabbage rolls effortlessly, enabling you to enjoy a delicious meal without the extra prep work.
