Ingredients
- (1 lbs) Lamb Stew
- (1) Onion (chopped)
- (1/4 cup) Carrots (diced)
- (1/4 cup) Celery (diced)
- (3 cloves) Garlic (chopped)
- (1/2 cup) Red Wine
- (6) White Mushrooms (sliced)
- (2 cups) Beef Broth
- (1 tsp) Rosemary
- (1/2 tsp) Xanthan Gum
- Olive Oil

Directions
Start by heating a generous splash of olive oil in a large skillet over medium-high heat. The oil should shimmer slightly, indicating that it’s hot enough to start cooking. While the oil heats up, take your lamb stew meat and season it generously with salt and pepper. This simple step enhances the flavour of the meat and sets the stage for a delicious stew.
Once the oil is ready, carefully add the seasoned lamb to the skillet. You want to brown the meat on all sides, which should take about 5-7 minutes. This browning process is crucial as it develops a rich, savoury flavour that will infuse the entire dish. Once the lamb is beautifully browned, remove it from the skillet and set it aside on a plate.
In the same skillet, toss in the chopped onion, carrots, celery, and garlic. These aromatic vegetables will add depth and sweetness to your stew. Sauté them for about 3-4 minutes, stirring occasionally, until they become tender and fragrant.
