Ingredients
- (1) Whole Chicken
- (2 tbsp) Olive Oil
- (1 tbsp) Butter (melted)
- (2 cloves) Garlic (minced)
- (1 tsp) Thyme (dried)
- (1 tsp) Rosemary (dried)
- (1 tsp) Salt
- (1 tsp) Black Pepper
- (1 tsp) Paprika
Directions
Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature is essential for achieving the perfect roast, as it ensures the chicken will cook evenly while developing a beautifully crispy skin. It’s crucial to allow the oven to reach the full preheat temperature before placing the chicken inside, ensuring optimal cooking conditions.
Prepare the Chicken: Start by rinsing the whole chicken thoroughly under cold water to remove any residue. Pat the chicken dry with paper towels, both inside and out. This drying step is vital because excess moisture can prevent the skin from crisping up during roasting, which is one of the defining features of a perfect roast chicken.
Make the Seasoned Butter Mixture: In a small bowl, thoroughly combine 2 tablespoons of olive oil, 2 tablespoons of melted butter, and 2 cloves of minced garlic. Incorporate 1 teaspoon each of dried thyme, dried rosemary, salt, black pepper, and paprika. To add a deeper layer of flavour, stir in a small amount of tomato paste. This combination of ingredients creates a rich, aromatic butter mixture that ensures each bite of chicken is flavorful and juicy.
Apply the Seasoning: Gently separate the skin from the chicken breast by carefully sliding your hands under the skin. Take care not to tear the skin as you do this. Evenly distribute the seasoned butter mixture beneath the skin, focusing on creating a consistent layer to maximize flavour absorption. Afterward, rub the remaining mixture over the entire chicken, ensuring that you coat every part of the skin. This step is crucial for infusing the chicken with flavour while promoting a golden, crispy exterior.
Roast the Chicken: Position the chicken breast side up in a roasting pan, ensuring it's centred for uniform roasting. Place it on a lower rack in the preheated oven and let it roast for 45-50 minutes. To confirm the chicken is thoroughly cooked, use a meat thermometer to check that the internal temperature has reached at least 165°F (74°C). This ensures the meat is juicy and safe to eat.
Rest and Serve: After removing the chicken from the oven, let it rest for 10-15 minutes before carving. This resting period allows the juices to redistribute throughout the meat, resulting in tender, moist chicken. Carve the chicken with care and serve it alongside your preferred sides, creating a satisfying and delightful meal for everyone to enjoy.
