Simple Italian Sausage, Pepper & Onion Skewers

Ingredients

  • (1 lbs) Pork Italian Sausage
  • (1) Large Red Bell Pepper
  • (1) Large Green Bell Pepper
  • (1) Yellow Bell Pepper
  • (1) Large Red Onion
  • (2 tbsp) Olive Oil
  • (2 tsp) Italian Herb Blend
  • (1 tsp) Garlic Powder
  • (1 tsp) Kosher Salt
  • (1/2 tsp) Black Pepper
  • (2 cups) Marinara Sauce
  • (8) Wooden Skewers

Directions

Soak the wooden skewers in water for about 20 minutes before you get started. This helps prevent them from burning on the grill.

While the skewers are soaking, go ahead and preheat your grill to high heat so it's nice and hot when you're ready to cook.

Now it’s time to assemble your kabobs. Thread chunks of sausage, bell peppers, and onion pieces onto the skewers, alternating the ingredients for a nice mix of colours and flavours on each one.

Once the kabobs are assembled, brush them lightly with olive oil to help them cook evenly and prevent sticking. Then, season them generously with a mix of Italian herbs, garlic powder, kosher salt, and a bit of black pepper.

Place the kabobs on the hot grill and cook for about 4 to 5 minutes on each side. You’re aiming for about 10 minutes total, or until the sausage is fully cooked and the veggies have a nice char to them.

During the last couple of minutes on the grill, brush the kabobs with marinara sauce. This gives them a rich, savoury glaze that pairs perfectly with the sausage and grilled veggies.

Serve the kabobs hot off the grill with a little extra marinara sauce on the side for dipping. They’re flavourful, simple, and great for sharing.

Notes

If you don’t have access to a grill, the kabobs can also be cooked on a stovetop using a grill pan or baked in a 400°F (200°C) oven for approximately 15 minutes, turning them halfway through. Brush with marinara sauce during the final few minutes of cooking for the best flavour. You can also add other vegetables like zucchini, yellow squash, or whole mushrooms to vary the texture and taste. The kabobs can be assembled ahead of time and stored in the refrigerator until you're ready to cook. To ensure the sausage is fully cooked, use an instant-read thermometer to check that it has reached an internal temperature of 160°F (71°C).
