Ingredients
- (1 lb) Beef Ribeye Steak
- (1 3/4 cup) Kosher salt
- (1 cup) Unsalted butter (softened)
- (2 cloves) Garlic (minced)
- (1) Lemon zest
- (1) Lemon zest
- (2 tbsp) Chives (thinly slived)
- (1 tbsp) Dijon mustard
- (2 tsp) Hot sauce
- (2 tsp) Horseradish
- (1/2 tsp) Black pepper (freshly ground)
- (1/2 tsp) Smoked paprika
- (1/4 tsp) Chili powder
- (1 tbsp) Neutral oil
- Flaky sea salt
Directions
Prepare the Steak:
Start by heating a medium stainless steel or cast-iron skillet over medium-high heat. While the skillet is warming up, pat the steak dry with paper towels to remove any excess moisture. This helps achieve a nice sear. Once dry, season the steak evenly on all sides with one teaspoon of kosher salt.
Make the Cowboy Butter:
In a small bowl, combine softened butter with minced garlic, lemon zest, chopped chives, Dijon mustard, hot sauce, horseradish, black pepper, smoked paprika, chili powder, and the remaining 3/4 teaspoon of kosher salt. Mix everything together until it’s smooth and well combined. This will be your flavorful cowboy butter.
Cook the Steak:
Once the skillet is hot, pour in some neutral oil and swirl it around to coat the bottom of the pan. Carefully place the seasoned steak in the skillet and let it cook undisturbed for about 3 to 4 minutes, or until a golden brown crust forms and the steak easily lifts from the pan. After that, flip the steak over, reduce the heat to medium, and add 2 tablespoons of the cowboy butter to the pan. Allow the butter to melt, and then use a large spoon to scoop up some of the melted butter and drizzle it over the steak. Continue cooking until an instant-read thermometer inserted into the center of the steak reads 125°F, which should take another 3 to 4 minutes.
Rest and Serve:
Once the steak is cooked to your desired doneness, transfer it to a cutting board and let it rest for about 5 minutes. This resting period allows the juices to redistribute throughout the meat. After resting, cut the steak away from the bone and slice it against the grain for tender pieces. Finish by topping the steak with a sprinkle of flaky sea salt, a dollop of the cowboy butter, and a few chives for garnish. Enjoy your flavorful steak!
