Ingredients

  • (6) Pork Chops
  • (1/4 cup) Peanut Oil
  • (1/4 cup) Soy Sauce or Coconut Aminos
  • (1/4 cup) Unseasoned Rice Vinegar
  • (1 tsp) Dried Chili Pepper Flakes
  • (2 tsp) Ginger Puree or Ginger (minced)
  • (2 tsp) Garlic (minced)
  • (1 tsp) Dried Mustard

Directions

Give your pork chops a quick trim; if there’s a bit of extra fat on the edges, feel free to cut some of it off. You don’t have to be too fussy, just remove anything you don’t want on your plate later.

Next, it’s time to whip up the marinade. In a mixing bowl, combine a splash of oil with soy sauce, rice vinegar, a pinch of chilli flakes, a spoonful of ginger puree, garlic puree, and a bit of dried mustard. Give it all a good whisk until it’s smooth and nicely blended.

Place your pork chops in a large resealable freezer bag or a shallow container with a tight lid. Pour the marinade over the chops, making sure they’re well coated. Pop them in the fridge and let them soak up all those flavours for at least 6 to 8 hours. If you’ve got time, overnight is even better!

When you’re ready to cook, preheat your grill to medium-high heat. Give the grates a quick spray with non-stick grill spray; it’ll help prevent the pork from sticking.

Take the pork chops out of the marinade and let the excess drip off. Set them aside for a few minutes so they can come to room temperature. This helps them cook more evenly.

Now, place the chops on the grill at a bit of an angle to the grates, it helps get those nice, professional-looking grill marks. Grill for about 4 to 5 minutes.

After that, rotate the chops to the opposite angle (like a 90-degree turn) and grill for another 4 to 5 minutes. This gives you that great criss-cross pattern.

Flip the pork chops and cook the other side for another 4 to 5 minutes, or until the internal temperature hits 145°F (63°C). If you’ve got a meat thermometer, now’s the time to use it!

Once they’re done, take them off the grill and let them rest for a couple of minutes. Then serve them up while they’re hot, tender, juicy, and packed with flavour.

Notes

If you don’t have access to an outdoor grill, a stovetop grill pan or an indoor electric grill will work just as well. Using an instant-read meat thermometer is recommended to ensure the pork chops reach the ideal internal temperature of 145°F (63°C) for safe and juicy results.
